Pumpkin Streusel Bars

1/2 recipe of Pâte Sucrée dough

1 15 oz. can pumpkin puree

1 large egg

1 t. vanilla

1/2 t. all spice

1/3 c. whole milk greek yogurt

1/4 c. sugar

1/4 t. salt

2 c. streusel topping*

*used granulated instead of coconut sugar


  1. Pre-heat the oven to 350 degrees fahrenheit
  2. Press the dough into a 9 x 9 inch glass baking dish
  3. Bake for 15 minutes.
  4. Whisk the next seven ingredients together.
  5. Pour onto the hot crust.
  6. Sprinkle the streusel topping onto the pumpkin layer.
  7. Bake for 40 minutes or until firm and golden brown.
  8. Cool completely and serve or refrigerate and serve cold.
