Pumpkin Streusel Bars

StreuselAfter drooling over Strudel’s Pumpkin Breakfast Bread, I abandoned my use of butternut squash and decided I wanted to make something this week with pumpkin too! These pumpkin streusel bars come together easily and fill the house with the smell of pumpkin and spice.

The base of these bars is the other half of the Pâte Sucrée I used for the butternut hand pies.  These bars are thick and sweet with a tender streusel topping that makes it hard to stop at one bar!  Speaking of streusel, here’s quite possibly my favorite streusel-y recipe ever that’s ALSO great for fall… amish cake.

Pumpkin Streusel Bars

  • Cook Time: 60 minutes
  • Total Time: 70 minutes
  • Yield: 9 bars 1x


1/2 recipe of Pâte Sucrée dough

1 15 oz. can pumpkin puree

1 large egg

1 t. vanilla

1/2 t. all spice

1/3 c. whole milk greek yogurt

1/4 c. sugar

1/4 t. salt

2 c. streusel topping*

*used granulated instead of coconut sugar


  1. Pre-heat the oven to 350 degrees fahrenheit
  2. Press the dough into a 9 x 9 inch glass baking dish
  3. Bake for 15 minutes.
  4. Whisk the next seven ingredients together.
  5. Pour onto the hot crust.
  6. Sprinkle the streusel topping onto the pumpkin layer.
  7. Bake for 40 minutes or until firm and golden brown.
  8. Cool completely and serve or refrigerate and serve cold.
