Triple C Clusters
When it comes to airplane snacks or snacks in general, next to cashews, my next favorite snack is chocolate. I recently went to my favorite spice store, Savory Spice, and was inspired to make some cashew clusters with a twist, Chicharron Salt!
What could be better? Sweet. Salty. Crunchy. Slightly Meaty.
Yes, please!
I grew up eating pork rinds as a snack and there was something so tempting about adding them to chocolate as an adult!!
Chocolate Cashew Chicharron Clusters
makes 10 small clusters
1 c. dry roasted (not salted) cashews
1 c. 60% Ghirardelli chocolate chips
1/2 t. chicharron salt + 1 t. for sprinkling
waxed paper
Melt the chocolate chips in a microwave safe bowl for 1 minute, stir and let sit for 30 seconds, stir again. The chips should be about 90 % melted. Add the cashews and the 1/2 t. chicharron salt and stir together.
With a small spoon (I like to use metal with hot chocolate) dollop the clusters on waxed paper. Once all ten have been placed on the waxed paper, with another spoon sprinkle the chicharron salt on the top of each cluster.
Let cool completely and enjoy!!
