Planked Salmon Medley

StreuselFor the past six months I have been buying wonderfully flavored salmon frozen on cedar planks.  My grocery store carries Cedar Bay Cedar Planked Salmon in three flavors (yes, I’ve tried them all) and they quite frequently go on sale.  They make cooking up salmon on the grill super easy (yes, there is snow on the ground and I still use my grill).

I generously seasoned the bell peppers with my new favorite pepper,  the Bourbon Barrel Smoked Black Pepper that I used in this and this recipe recently.  This recipe made three lunches for me for the week.  Easy.  Delicious.

 

Salmon, Pepper and Cauliflower Medley

makes three servings

 

1 x 24  oz. cedar planked salmon (I used the pineapple maui flavor), thawed

1 small head of white cauliflower

1/2 bell pepper of each color; red, orange and yellow

2 T. avocado oil

1/2 t. Himalayan sea salt

1 t. bourbon smoked black pepper

Pre-heat the grill on medium high heat and place the salmon and cedar plank directly onto the grill.  Grill for 15 minutes or until cooked.  The plank will be completely charred and the salmon skin will stick to the plank when the salmon is removed from the plank with a spatula.  Let the plank cool completely on the grill and then throw away.

While the salmon cooks, clean and rice one head of cauliflower.  To rice the cauliflower, place the clean cauliflower florets into a food processor and pulse in short pulses until the cauliflower is the size of large pieces of rice.  Slice the bell peppers into thin slices.

Heat a skillet with 1 T. of oil and cook the bell peppers with the black pepper and salt on medium high heat until they reach the desired tenderness.  I cooked mine for several minutes.  Set aside in a bowl.  To the same skillet, add the other tablespoon of oil and the riced cauliflower (you can also buy already riced cauliflower in bags at Trader Joe’s).  Stir while cooking for several minutes.  Plate a portion of the riced cauliflower, add a portion of the bell peppers and place a portion of the salmon on top.  Eat up!
