Blue Corn Waffle Tacos
I was recently inspired to make these when I drooled over the May issue of the Food Network magazine. I love this magazine. They always have great recipes and ideas. If you haven’t checked it out, give it a try. Waffle Tacos are apparently all the rage! Who knew! FNM!
They highlighted some yummy tacos but none were Blue Corn. Being a lover of Blue Corn Tortilla chips, I thought Blue Corn Waffles needed to see the light of day. Luckily for me I have a Vitamin Cottage near my work that sells Blue Cornmeal.
Blue Corn Waffles
adapted from The Joy of Cooking
makes 8 waffle taco shells
1 3/4 c. blue cornmeal
1 T. baking powder
1/2 T. sugar
1/2 t. salt
2 duck eggs (or 3 large chicken eggs)
4 T. butter, melted
1 1/2 c. milk
Combine the cornmeal, baking powder, sugar and salt in a bowl. In a different bowl, whisk together the milk and egg. Slowly whisk in the melted butter. Mix the liquid into the dry ingredients and let sit for about 10 minutes so that the cornmeal can soak up the liquids.
To go along with my taco shells I fresh ground some pork from 2 pork chops with 3 T. Savory Spice Taco Seasoning. I also had fresh lettuce from my garden, salsa and cheese on hand to complete the creation.
Once the hot waffles are made, layer ’em up…
Cheese, Seasoned Pork, Lettuce, Salsa…
Invite some friends over, serve with a nice cold beer on the patio. Perfect summer meal!
