Peanut Butter Chocolate Rice Krispie Treats

 

 This weekend, we were kindly invited to a BBQ at a friend’s house (since we live in Seattle, it obviously turned into an indoor BBQ, since it rained the entire time). BUT – I was presented with the dilemma of not having much time to bake and not knowing any of the other guests.

 

In my years of eating, there are three party snacks that I’ve learned groups generally launch themselves on. They are:

 

1. Guacamole

2. Pigs in a Blanket (I don’t eat meat… but I’ve seen this happen multiple times and have repeatedly considered making vegetarian options)

3. Rice Krispie Treats

 

Because of my extraordinary love of chocolate and peanut butter, I decided to make a super easy faux fancy-pants RKT.

 

 

It’s so super simple, no further explanation in necessary!

 

Peanut Butter Chocolate Rice Krispie Treats

6 cups Rice Krispies

1 10.5 ounce bag mini marshmallows

¼ cup butter

2 cups peanut butter (I used an entire 18 ounce jar)

12 ounces milk chocolate chips

 

 

Spray a 9 x 13 inch pan with cooking spray and set aside

 

Melt marshmallows and butter in a large pot on the stove over medium heat, stirring frequently. Once the mixture has completely melted, stir in the Rice Krispies and mix until the cereal is entirely coated.

 

Pour the coated cereal into the prepared pan and press evenly (to make it easier, you can use a piece of wax paper – or your hands – spritzed with cooking spray).

 

Place the peanut butter into a microwave safe dish (I used a glass measuring cup), and melt until thin, about 1 minute. Pour the melted peanut butter over the cereal, spreading with a knife, as needed.

 

Next, place the chocolate into a microwave safe dish and again microwave until melted, about 1 minute. Keep a close eye on the chocolate as it can burn quickly (I like to microwave chocolate in 30-second increments, stirring in between).

 

Pour the chocolate layer over the peanut butter layer, again using a knife to spread around (if you have an offset spatula, this is a great time to use it).

 

Refrigerate until firm!
