Horseradish Mashed Potatoes

 

Hi Friends!

 

Just wanted to check in and say hello. I apologize for going missing… Brandon and I decided that we should buy a house, and it’s become an all-consuming process. Wish us luck as we plod our way through the Seattle housing market! (note: if you happen to live in Seattle, and are looking to sell your turn-of-the-century, 3 bed + 2 bath home in a walkable neighborhood at a reasonable price – call me. I promise bake you whatever you want, for as long as you want)

 

SO. With all that’s going on, I haven’t had quite as much time to bake. BUT – I made some yummy (low fat!) mashed potatoes the other night. There’s no real recipe, I can’t say I measured the ingredients, so these are my best guesses:

 

2 large Yukon gold potatoes, peeled and boiled

1/3  to 1/2 cup non-fat greek yogurt

1-3 tablespoons horseradish (ie. however much you like)

splash of milk

kosher salt and pepper

 

I just mashed everything together, then immersion blended the hell out of it. Delicious!

ps. Brandon thought the potatoes would’ve been better with butter, but duh… everything is better with butter.

 

pps. Those are the potatoes up above… I got full, then bored, so decided to decorate my leftovers.

 

ppss. speaking of butter… I did find time to make up and bake up some peanut butter sandwich cookies (Streusel and I seem to be on the same wavelength), and I’ll get that post up this weekend
