Help – This blog is making me Fat!
Has anyone else experienced this with their blog?
I have packed on 5 pounds since Strudel and I started this blog back in November.
As much as I’d like to kid myself and say, “What’s 5 pounds? Doesn’t everyone love me for who I am?”
The reality is my favorite summer clothes are tight.
It all came to a head when I put on my bathing suit and my once loose board shorts can barely be tied. OMG!
What’s the solution?
Yes, more exercise. I went on a nice hike today and even got to say hello to a rattlesnake. Stay on your side of the trail Mr. Snake and I’ll stay on mine!
Unfortunately, eating less buttercream frosting is also part of the equation.
But I love you, buttercream, I really do! How am I going to make cupcakes for two weddings this month without dipping into the buttercream? Isn’t that what boyfriends are for? Honey – can you come taste this?
As I was sitting by the pool in my too tight swimsuit watching my daughter splash in the water, I also had some time to read the June 2011 issue of Clean Eating that I had just picked up at the grocery store.
Has anyone else checked out this magazine?
It has some wonderful recipes! I really like it.
One of the recipes in this issue was a Chocolate Banana Freezer Pie.
I wasn’t crazy about making the pie but I thought the filling, frozen in glass dishes, would be a nice summer dessert and it was!
Frozen Chocolate Cups
3 large ripe bananas
1/4 c. unsweetened cocoa powder (I used good ole Hershey’s)
1 c. coconut milk
1 t. vanilla extract
Throw all of these ingredients into a blender and blend for 3 to 5 minutes on high speed until the mixture is very, very smooth.
Pour into 4 glass dishes, cover with plastic wrap and freeze for at least an hour.
When ready to serve let sit at room temperature for 15 to 20 minutes.
Move into a pretty dish and serve with a dark chocolate stick.
This nice little treat is only 160 calories per serving and very chocolatey.
Maybe there is hope for my board shorts yet!
