Kamut Waffles with Maple Whipped Cream

Good morning everyone!

It’s going to be 80 degrees here in Denver today.  Yippee!

Before I set off on a hike with my dog Max…

I wanted to share with you some yummy waffles I made this morning.

If you read this blog on a regular basis you know I, Streusel,  like kamut rolled flakes, I have posted about them before, here and here.

I decided to grind the flakes in my blender and see how they tasted as waffles…

Spectacular!  They give the waffles a bit of a nutty taste and texture.

After the April Daring Bakers’ Challenge of Maple Mousse, I am still craving maple so I topped these waffles with Maple Syrup and Maple Whipped Cream. 

Perfect!

Kamut Waffles – adapted from The Joy of Cooking Basic Waffle Recipe

Dry ingredients…

1 1/2 c. ground kamut flakes or kamut flour

1/4 c. all-purpose flour

1 T. baking powder

1 T. sugar

1/2 t. sea salt

Wet ingredients…

3 eggs, beaten

4 T. unsalted butter, melted

1 c. 1% milk

Special Ingredient…

1/2 c. unsweetened apple sauce

That’s right!  Apple sauce! 

How can I kill the healthfulness of kamut by loading the waffles with butter? 

I can’t.

So I cut back the butter and added apple sauce.  It gives the waffles a bit of tartness which really tastes lovely with the maple whipped cream.

Assemble the three seperate types of ingredients together. 

Mix them all up with a whisk and let sit for 20 minutes.  This batter will be a little thicker than you are probably accustomed to!

Laddle onto a hot waffle iron and cook accordingly.

I can never get perfectly round waffles – can you?

While the waffles are cooking…

Combine 1/2 c. whipping cream with 2 T. maple syrup and beat with a hand mixer until whipped to your liking!

Serve the waffles with maple syrup and a dollop of whipped cream. 

Oh yeah…

don’t forget to serve with a latte and a nice side of Jemaine!
