S’more Brownies

My daughter wanted to make brownies for her “Brownie” who was turning 2!

 

Brownie is a little stuffed dog.

At the same time she wanted to make Smores because she missed out making them at school.

 

Me, being the – How many things can I get done at once – kind of gal, said real convincingly to my 6 year old, “Let’s make Smore Brownies!”

 

My daughter was thrilled with that one – yeah mom!

This recipe was inspired by the Fat Witch Brownies by Patricia Helding.

 

Ingredients

1 stick of unsalted butter

1/2 c. ghirardelli bittersweet chocolate chips + 2 T. unsweetened cocoa powder

1/4 t. baking soda

1 c. sugar

4 eggs

1 t. vanilla

1/2 c. all purpose flour

1/4 t. salt

1 c. chopped graham crackers

1 c. ghirardelli milk chocolate chips

1 c. mini marshmallows

Preheat the oven to 350 degrees Fahrenheit.

 

Grease a 9 x 9 pan with the butter wrapper.

 

Put the butter and chocolate chips in a medium saucepan on medium heat.

 

Once melted, whisk in the cocoa powder and baking soda.  Set aside.

 

Combine the sugar, eggs and vanilla in the bowl of a stand mixer with the paddle attached.

 

Beat on high for 1 minute.

 

Add the flour and salt and slowly pour in the chocolate mixture.

 

Add half of the brownie batter to the 9 x 9 pan.

Mix the graham crackers, milk chocolate chips and marshmallows and add to the batter.

Cover this with the remaining batter.

Bake for 30 minutes.

 

Cool for at least an hour before cutting and serving.
