Little Cupcakes for a New Little Boy
Today is a special day. A new life has just entered the world.
Really, about 30 minutes ago…
His name is Jack Kenneth and he is my nephew.

Wow! Super exciting.
In honor of this little man, I made Limoncello cupcakes with Blue Cream Cheese Frosting…
Ingredients
makes 24 mini cupcakes
adapted from “Easy-mix yellow cupcake batter in Cupcakes! by Elinor Klivans”
3/4 c. all purpose flour
1/4 t. baking powder
1/8 t. baking soda
1/8 t. salt
1 large egg
1/2 c. sugar
1/4 c. limoncello (I used Caravella)
1/2 t. orange extract
1/4 c. sour cream
In a stand mixer with the paddle attachment combine the egg, sugar, limoncello, orange extract and sour cream.
Add the remaining dry ingredients and blend for a minute.
Line a mini muffin pan with mini cupcake liners and fill 2/3 full with the batter.
Bake at 350 degrees Fahrenheit for 8 to 10 minutes.
Cream Cheese Frosting
4 oz. cream cheese, room temperature
1/4 c. unsalted butter, room temperature
1/4 t. vanilla
1 c. powdered sugar
blue gel food coloring, added to desired hue
Blend the butter and cream cheese together in a stand mixer with the whisk attachment. Add the vanilla and powdered sugar and food coloring and whip on high speed for several minutes until fully incorporated.
Pipe onto cooled cupcakes.
These cupcakes are light and slightly spongey.
