Golden Delicious Muffins

I bought a big bag of organic golden delicious apples and by the time I got them home the little bruises were popping up everywhere.

Can you see them?

I got excited by this because these beautiful apples were now the perfect candidate for a recipe I have been trying to perfect for weeks.  I think I finally have it!   You’ll have to tell me if you agree!

 

I have also tried using galas but these muffins were so tasty with golden delicious I think they might be a better choice.

 

Makes 12 hearty muffins

 

Muffins

2 c. all purpose flour

1 t. baking powder

½ t. baking soda

½ t. sea salt

2 eggs

½ c. canola oil

¾ c. sugar

1 t. vanilla

 

2 ½ c. chopped apples (three medium size apples cored and placed in food processor with skins)

 

Streusel

1 T. AP flour

1/3 c. sugar

1 t. cinnamon

2 – 3 T. canola oil

 

Combine the muffin ingredients until just mixed, this will be a dense dough with all of those gorgeous apple chunks.

Oil a 12 place muffin pan.  I like to use a silicon baking brush for this.

 

Divide dough.  Combine the dry ingredients of the streusel and then slowly pour in the oil and mix with a fork until the desired consistency is reached.  This will create a tender yet crunchy streusel that is perfect atop these muffins.  Evenly divide streusel over muffins!

Do not overbake these muffins!

 

Bake for approximately 15 minutes at 350 degrees fahrenheit just until the lightest shade of brown.

 

Remove these little gems from the  oven when they appear slightly underdone and let them cool in the pan for 10 to 15 minutes.

 

I wish my camera could capture steam rising off these muffins.
